Palestinian tomato varieties like the Mandawi and Khalili are succulent with a unique, rich, robust, and subtly sour flavor. These tomatoes are carefully selected, washed, and sun-dried by women-owned cooperatives. They are then blended with wild capers and organic olive oil.
